Farmers omelet with potato croquettes

Contains 350 kcal p.p.

Ingredients

For 2 persons
If you have a BMI above 30, you can take 1.5 portion to prevent you from getting hungry too soon.

  • 2 eggs
  • 2 beef tartar of 90 g each
  • 25 g grated 20+ cheese
  • 200 g Italian mixed vegetables
  • 4 mini potato croquettes (frozen)

Make sure that you have the following additional ingredients: Italian herbs, garlic powder, cajunherbs, olive oil, pepper.

Cook the mixed vegetables in the microwave without adding any water. In the mean time, preheat the oven at 180 degrees Celsius and bake the mini potato croquettes without adding any oil! Put the beef tartars on a plate, sprinkle them with quite a lot of cajunherbs. Mix the eggs with some Italian herbs and garlic powder. Heat a frying pan with 2 teaspoons of olive oil, put the vegetables in the pan and the beef tartars in small pieces. Put the mixed eggs on top and then the grated cheese, sprinkle some pepper on top. Put the lid on the pan and bake the omelet until the cheese has melted. Take the omelet out of the pan, put it on a large plate, cut it in 4 pieces and put 2 pieces on a plate, served with the mini potato croquettes.
